Remarques & avis / Review — Contrarily to the preset idea that sushi is Japan, there may not be more Japanese a dish than pickled vegetables which, usually as a side dish, is there at every meal. Tsukemono introduces here their great variety, with an abundance of pictures and recipes, and even tells how to make them from scratch. Excellent publication on the topic.
Contrairement à l'idée reçue que le sushi c'est le Japon, il y a probablement peu de plats aussi typiquement japonais que les légumes marinés, qui accompagnent, habituellement en petites coupelles, tous les repas. Tsukemono présente leur grande variété, à l'aide d'une profusion de photographies et de recettes, et enseigne même comment les préparer de rien. Excellente publication sur le sujet.
